Ground Meat Casserole

The title of this post is actually a recipe that I’ve been using for years, but last night when I thought about making it I realized that I many leftovers to use up in the refrigerator. This recipe is very forgiving and can actually be made with whatever you have on hand. The meat is interchangeable as well as the seasonings. I also figured out the ratio of the ingredients for making my own bisquick to make it sodium friendly. I’m posting the original recipe as well as the bisquick recipe just in case anyone might be interested.

Original Recipe

1 pound ground beef 1 cup grated cheddar cheese 1 1/2 cups chopped onion 1 cup milk 1/2 tsp salt 1/2 cup bisquick 1/4 tsp pepper 2 eggs

Brown meat, onion, salt and pepper. Drain. Place meat in a 9″ square pan and cover with cheese. In a separate bowl mix milk,bisquick, and eggs. Pour over the cheese and bake. Heat oven to 400º then turn down to 350º and bake for 30 minutes.

I found some turkey burger in the freezer that needed used up so I browned it with some onions and peppers that were also in the freezer. I sprinkled some dried minced garlic and black pepper in to give it more flavor. As I was going through the fridge to see what else may need using up I found some whipped cream cheese and a little cheddar that I mixed in after everything was browned and drained. This past week we had corn, green beans, carrots and peas as our veggies at other meals so those remnants were thrown in along with some of my dehydrated veggies like kale and celery to make it a colorful and tasty casserole.

When making this and adding extras like I did, I did add extra milk so that it wouldn’t be too dry but you could also use a chicken or beef broth for added flavor. This is just a basic casserole recipe that can be altered to anyone’s taste or health needs which makes it so versatile to be able to use up what leftovers you may have on hand.

Here is the low sodium version of the bisquick that you will need to pour over the top. Just mix ingredients together.

1/2 cup flour 1’2 tsp baking powder 1 tsp sugar 1 Tblsp oil

I love coming up with different creations when cooking and I think that is why casseroles are very forgiving if you should not quite make it just right. You could make this with ham and cheese and it would be the same as eating a biscuit sandwich but in a casserole form. Remember the possibility’s are endless!
